It makes me wonder, I've left my phone on my bike (simple spring loaded one handed holder) many times when I've forgotten it and gone into a restaurant or store, never worry about it. I've left my $500 leather HD jacket on my bike (i sit where I can see the bike) and no-one messes with it. My bike doesn't even HAVE an ignition switch...
Where do you folks live that you're in constant fear of things walking away? I live in a city of 70,000+ people!
I live in a small country town. There's still crime here. My phone is in my pocket and I have it wired into the left bag if I need to charge on the fly. Then I operate it through the BOOM. When I stop, I usually have my camera bag and my phone. The phone was cheap compared to the camera. They both come with me. It would be cheaper to replace the bags if they broke them open only to find nothing, than replace my phone or camera. I don't trust anyone I don't know anymore.
As far as the phone theft, yeah, it's worthless to them, but you're still out a phone. Even if you replace it in a few days, it's a bigger pain in the *** than it needs to be.
