They have them there, hanging on walls usually, for this very reason. I've tried three or four of them over the last few months and never got a hint that they expected me to buy one. Just do it. All you are going to get here is one subjective opinion after another.
Good luck with demo seats - the guys suggesting that must live near large dealerships. The dealer near me is a mid/small dealer. They have bikes but not an extensive parts inventory. Some, just not a lot. They used to have 3 or 4 demo seats on the wall, but never what I was interested in. Now....I see none. Probably a good suggestion, if you live in the right place.
I suppose Im not opposed to doing so. But Ive got no real intent on buying new, would feel kinda bad trying to demo seats and then saying ok thank, peace out. Lol
I admire your attitude about not wanting to waste the time of the dealer employees buy demoing their seats and then buying somewhere else. Thanks for being considerate of their time and efforts.
Just wanted to give everyone a quick update. BIG thanks to @ridingout for selling me his Ultra Limited seat for a great deal! It arrived today and Even that first leg over, its clear that this seat was meant for logging serious miles in comfort. In my case, Man Become Comfort..... haha

The Stock Road King seat IS a very comfortable seat, but the Ultra Limited seat just has *that* much more cushioning and support. The stock Road King rear passenger handle strap is a bit too short due to the increased thickness of the seat, so Ill have to source one. Eventually, I plan to get a back rest.
Update 2: Rode to work this morning. The Ultra seat put my eyeline about 2 inches over the stock height windshield. Im on the short side at 5'5". With the stock RK seat, my eyeline was right at the top of windshield, partially blocked. Incredibly, I still had very good footing to maneuver with engine off and coming to a stop.
So not only did I get a much more supportive and comfortable seat, I got a seat that will let me keep and use the stock windshield.
Yes, Its a big seat and not.... sleek. But wow, does it nail its function!!
