as far as touring mufflers go, you can easily tell the cvo mufflers from stock by the shape of the muffler. stock have the tapered ends, while the cvo have a removeable end cap. may or may not have heat shields as well. (they should but sometimes the po doesn't include them in the sale). there will also be a epa stamp on them that has the model designation in it.
in stock form, they will be quieter than stock. but with removing the baffle and replacing with the fullsac cvo cores, they make very nice mufflers.
you can pretty easily tell the difference between stock and cvo mufflers here:
IF the CVO muffler has a Fullsac CVO Baffle, (or another aftermarket baffle) you will generally see a it attached via a screw right Infront of the removeable end cap.

And just to clarify. The end cap will be held on by 3 countersunk screws. The Fullsac baffle will be held in place by 1 hex head bolt/screw at the bottom...6 o'clock position.
