Congrats on the build, I'm sure you'll be thrilled with it. I've got the exact same bike as you, didn't buy it brand new but when I got it two years ago it only had 7,200 miles on her. Original owner barely rode it. I promised myself I wouldn't go crazy with performance mods. So far a set of Vance and Hines Power Duals going into Reinhart slip on mufflers, SE Stage 1 intake/filter and download. I also added a set of Wild 1 10" bars and went with LED lights all the way around except the front fender tip. Can't wait to hear how your build turns out and maybe a video sound clip would be great. I'm FINALLY going to start doing my 500 mile break-in tomorrow! 
I haven't been able to ride at all due to work schedule, family obligations, and a vacation my wife and I went on. After the 500 miles, it goes back in for an oil change and tune. Can't wait to see/hear/feel the results.

Got the break-in done yesterday. I was told not to go higher than 3500 RPM. I kept it between 2800 and 3300 RPM. Gotta love 6th gear... 3000 RPM and 80 MPH! I was told my gas mileage would be a little worse. It was actually a little better. 2 - 3 more MPG. It'll be interesting to see where lands after the tune, which I'm hoping to get done this week.

why not have them break it in on the dyno and then tune it right then?
