Recent carb tune, replaced float and everything else in the bowl, accelerator pump, etc. new gaskets on intake manifold, and on mikuni 42 hsr.
new petcock and line. Adjusted cables, fired it up and adjusted idle screws. Rode for 10 minutes and it stalled. Pulled over, wouldn't start for about
10 minutes. Then it started, rode for 2-3 mins, stalled. Repeat start, run, stall. Again and again. I was thinking maybe the float isn't letting in enough
fuel, but thats not it. waited a week, started it up, rode for 10 minutes, stalled, and wouldn't start back up. Tried for 30 minutes, had to call a flatbed.
Now Im not sure if it’s an ignition issue, or carb. Maybe complete rebuild kit? Could something be getting hot and causing electrical problem?

Did your troubles start AFTER the “carb tune”, or did you do all the things you did as a result trying to get to the bottom of the stalling problem?
My first thoughts;
Fuel filter.
Peeling tank liner.
Cross over tube plugged if applicable.
Fuel cap not breathing preventing flow.
Blocked air passages on the carb.
Did you pull the jets/emulsion tubes and inspect/clean them out?
Spark when it’s cranking (but not actually starting up)?
Dirty crank position sensor.
These are some of the things you can check easily yourself.
02 RoadKing, 1550. Replaced the old petcock (leaking), with a non vacuum one. Capped the vacuum off on the carb. Tanks are spotless, new filter.
new fuel lines. New MAP sensor. Re routed the breather lines to a catch can. I just ordered a new choke cable assembly. Going to check for spark
tomorrow. Mikuni HSR 42mm has a 160 jet. I should do a complete rebuild on it.

I can't help, but others might benefit if you clarify if it stalls while underway or just at idle. If it quits while underway, does it buck and backfire or act like all fuel has been shut off?
You haven't aswered the important question of did this stalling problem start after the "carburetor tune" was done, or was it happening before and is at least part of the reason for a "carburetor tune".
You would also help us all greatly if you would describe this stalling. For example, there's a vast difference between fading out and dying because of restricted fuel supply and suddenly shutting off because the ignition cut out.

If it's an abrupt stall (presume you mean shut off), that's almost assuredly electrical.
Wen it does this, have you noticed if the dashboard display shuts off too? That's to help zero in on if it's ignition only, or further upstream like a failing switch.
Its always been bright daylight out, so I didn't even notice the display. I should check to see if any codes came up. Reading on how to check them right now.
