Last fall I bought an 05 eglide classic. after putting on a couple thound miles I kept thinking man this bike is a real slug.So I put on a set of wild pig slip ons,a ness big sucker air cleaner changed the pilot to a#48,now when I crack the throttle she gets up an goes. Thses small mods made a big difference in my throttle response .I am going to ride it for a while ,then maybe tweak the carb a little a more.
I noticed the same thing , and the carb is pretty easy to tune also.
With a few parts for about $20.00 you can really get some bang for the buck with these bikes.
My sig shows my carb setup , mileage is really good also.

I recomemd after you are happy with the a/c and pipe mods to run it to the local dyno. Carb tuning is fairly cheap on the dyno compaired to FI. I had my sporty done, worth every penny!
