Passenger question-chopped or full tour pack backrest?
My opinon,
I LOVE The look of the chopped tour pak. Especially on a Street Glide (which I have)
But remember, not only will you loose space, regardless of which backrest you put on (chopped or full wrap) the chopped tour pack will have the top of the backrest 3" lower than the same backrest on a king tour pak.
The higher up her back the backrest goes, the better supported she will be, and the more she will be able to relax, which makes her more comfortable (generally speaking). Even if the "armrests" are not in the correct position for here (as they often are not) they do seem to provide a bit of a "secure" feeling to the passenger.
Remember that passengers don't have handlebars to hang onto, like we do. That backrest plays a HUGE part in their comfort back there.
Also if you ever decide to add rear speakers, your SOL with the chopped tourpak, unless you fab something custom.

I have a "Razor" tour pack on my road king that I added a couple years ago.
AdvanBlack makes a wrap around style back rest for Razor and chopped tourpack lids.
(As well as King tourpacks).
Just put it on last week, but due to recent rotator cuff surgery, my riding season is over so we can not try it out yet.
But I will say that it will definitely be much more comfortable for her compared to the small backrest.
