Like these from lyndall racing. What are the pros/cons of using them on a Street Glide or any tourer for that matter?

They are far lighter than the stock and I would imagine they don't get nearly as hot as stock style as well. I was down at Lyndall a couple of months ago and he was showing me the rotors. They are very nice. Not cheap, but you do get what you pay for.
