Sounds like a good time and have fun. Enjoy and appreciate the moment its fleeting.
My dad is up in age and medical issues too, so 2 wheeled long distance jaunts are not safe for him anymore. I am trying to talk him into being the chase vehicle and at least participating. Riding when we get where we are going. He has ridden all his life starting with his 1952 Indian Chief and 1955 KH sportsers. Back in the day we would ride to Toy runs, camping at Rendezvous, Laconia, Daytona. Now its just to the local breakfast discount joint and thats fine. These days he rides a 1989 Softail.
When traveling up to New York from New Jersey, I'd recommend you and your dad to ride up through Letchworth State Park (Home of the Grand Canyon East) starting at Portageville (South Entrance), ride throughout the Park which's 17 miles long and exit out at Mount Morris (North Entrance) which will lead you and your dad to Rochester. Be sure to bring your digital camera and take lotsa pictures cuz it'll be one of your cherished highlights/moments of your trip.
+1 on the Cardo Scala Q2 Multiset. I bought this about a month ago and it works great. The rider (G/F) and I can chat very comfortably. I have it mounted on a 3/4 helmet and also had it on my 1/2 helmet. I used the HD Audio Pouches (don't have part # handy) with the 1/2 helmet to hold the speakers. It worked fine.
