I have a 18 x 4.25 with a 150 on the rear of my SG.It does fill the rear fender nicely.
When I bought new wheels and tires I debated the 160.HogPro said it would fit but recommended sticking with a 150.Andy said they had seen high speed wobble issues with a 160 on the rear of a bagger.

I've noticed some wobble myself, thought it might be suspension related. Reckon it's a lack of rubber on the ground???
