My 03 FLHTCI came with the ugly water retaining pillow with buttons seat . I looked at Corbin and other quality replacement seats but wanted something unique .
I had a local custom guy reshape my stock seat and recover with Gator .
I've never seen a touring bike done this way yet . I'm very happy with the comfort level after around 20K since March 09 . Yeah I've been riding lots .

Some materials can be pretty vulnerable to sun/uv.
Where I live (desert Southwest), a lot materials get kinda dried out and eaten up. If the guy making the seat can assure you that it's durable, then go for it.
I guess these gators live a pretty rough life, so you're probably okay.
