Without checking the wiring diagrams for all model years, I won't generalize. But it was a simple installation on my '04 as described in this thread describing the HK installation along with HD's Boom Audio Music Intercom kit for a CB installation:

Pre-'04 models don't have a serial data wire to supply vehicle speed information to the HK unit, so the Automatic Volume Control feature won't work.
I know of a guy who installed an HK head unit in an '03 Ultra that works, though he didn't try to modify his OEM wiring for the rear speakers.
A used HK radio should work fine; a brand new one will need to be calibrated by the dealer or Iron Cross Audio can do it.
