Zion national park, north rim, Sedona. Are you basing out of Vegas and taking long one day rides or heading out for the week or something in between? What you can get to and back in a day from there is different then a long weeks run of course.
If you come through our way into Kingman, make sure you roll up old route 66 through Oatman, AZ.
Oatman is a cool stop. We go across the dam to kingman ( theres a harley dealer in kingman) then hit old 66 to oatman. Stop at the visitor center in kingman they will give directions. When you leave oatman it is about 90 miles to vegas.
Just a side note:
If you plan on Visiting the Harley Cafe on the Strip watch the entrance to the parking structure, it's a killer.
Last year my wife and I decided to stop in after riding through Red Rock Canyon (Nice Ride).
We turned down the side street to enter the driveway to the parking structure which is concrete.
As we left the street threre was water in the gutter (not a lot) as the bike was turning it suddenly decided it wanted to be a speedway bike and slid sideways.
I to this day do not know how I kept her upright.
But I did nave to change my shorts afterwards.
The driveway is smooth concrete not brush or rough finish so its like a skid pan.

Check your maps and if possible enter the Grand Canyon from the Cameron side, I was there a week ago during the week not a weekend and entered from Cameron and there were 3 cars in line and when I was exiting the canyon from the main entrance there were in excess of 300 cars and buses trying to enter thats a lot of sitting in the heat on a bike. Bring lots of water.
Las Vegas - Hoover Dam - Kingman - Sedona - South Rim Grand Canyon - Flagstaff - Page - then the Utah route shown on map above- Back into Las Vegas on 15 South....one of the best rides ever on earth.
I highly suggest you DO NOT head out of, or into Las Vegas anytime during normal daylight hours. You need to be to at least Kingman before 9:00AM, or the heat will literally try to kill you.
Northern Arizona is much lower temperatures, but the sun will bake you.
Utah will also be warm.
Try to roll back into Vegas at night.
You absolutely must not under estimate how hot it is around here.
I have seen guys on the side of the road on their knees puking from the heat.
If planned correctly, it will be an amazing T-Shirt weather ride.
