I'm just curious, what is everyone using their accessory switch for?

Cigarette lighter. Really. That's it.
But others are using it for GPS, radar detectors, etc. Just about anything that needs an auxillary power source and mounts to your fairing.

I am running a dakota digital oil gauge that I have mounted on the right side of my front forks under the fairing and above the passing lamps.

I have a Jagg Oil Cooler on my bike and have a fan kit hooked to it so when I'm in stop and go traffic I can turn the fans on

I use it to control power to the 12VDC outlet in the Tour-pak.
