I use a cheap Cannon point & shoot in video mode with a 16 GB mem card. Graduated from taping it to my mirror to a $45 Ram mount. Works fine other than bug splats.
My latest version (last pic) is using my underwater housing for the Cannon. That way, I can have all the controls and just wipe of the lens with some lens cleaner between stops.
For editing, Windows Movie Maker came on my computer so I use that to mute the wind noise and add music / transitions, etc..
