I assume you currently have a 140/85/MU on the rear? You should get in a 150/80, which can be had with the same load rating as the stock tyre. Some members may suggest a 160, but IMHO that is too wide for a 3" rim.

I have an '07SG that I put tires on last week. Changed from the 16" to 18" and put a 130/70b/18 63H on the front, and a 150/80b/16 - 77H on the rear. Rear fit was close but not problems, didn't have to trim anything. Oh ya, they're Metzelers.

Put a car tire on it, then put a 40mm in each pipe & ride it like you stole it.... you have a rim for it already. This thing will be ready by sturgis at this rate.

Got a 130/70/18 on the front of my 08 and a 150 will fit on the rear. Belt guard is usually where they rub first and can be trimmed some if necessary.
