Aren't the recommended pressures also on the inside of one of the saddlebags?

Not sure, but they are in the owners manual. And revised numbers come with the instructions of low profile air shocks.

Do the "air" shocks have the same dampering systems as a regular shock? Some times I run my with no air.

They do have some damping in them, but they are a very cheap and basic design. It is difficult to define a 'regular' shock, which is why you will find so many threads on HDF about upgrades and other brands. There are some truly superior brands out there that can transform comfort and ride quality.
