It only happens in 6th gear so it is probably not the plugs or wires, air flow or anything like that. Although you should check those things to be sure. The problem is probably either the timing or the AFR. Retard the timing a degree or two in that RPM range so it will not burn so hot. Pinging is caused by your engine burning so hot the fuel ignites before the spark. I don't know much about an 07, but you will probably need a tuner in order to adjust the AFR and timing.
Added: I am a big believer in the knightrider Xied's. They are not a cure all but they may be all you need.
If you look at the 'RPM to gear ratio' on the above chart youll notice the RPMs will not be very different from 5th gear at 70-75 than 6th. But that difference will be enough to minimize or eliminate the ping. My suggestion is you do as I do and not use 6th gear unless your going to be cruising at 80+ for sustained intervals. This and retarding my timing has minimized carbon buildup which made pinging prevalent at the RPM ranges your describing.

all it took for my 07 street glide was a steady diet of "sea foam" which cleaned carbon from the combustion chamber. It's possible to see improvements with the very first use.
but give it 3 tank fulls of gas to work. I like this stuff alot. I use it in everything tha has an engine. good luck.

Well... working on the bike, I found a power commander under a side panel. Removed it, now pinging is gone. Every slight issue I had with the bike is gone. Runs like brand new now. Go figure.

Go to the Power Commander website and download the appropiate map for the A/C & Pipes you have install on the bike.
