I thinking of getting a new engine such as a 120R, S&S, Jim's etc to replace my stock engine. Does anyone have any recommendation of a GOOD shop around central Illinois to do a good job and reasonable on pricing of a new engine?? Any suggestions on which engine from your experience too? I want the power there when I want it but I will be cruising a lot too so it don't have to be the extreme power house as I want the reliability for long term also..

cant help you with and installer but I would take a look at the S&S 124.
also, if your planning on putting some real miles on it check out the S&S T111. Its specifically for touring. Its a square motor (4.125bore x 4.125stroke) and its really well balanced. Its not your normal big cube monster, the thing purrs along like a stock twin cam but packs some serious power. Its a good choice if you want a good solid comfortable cruiser motor with power for dayyyyssss, and not just the biggest number for you local bike night.
I have a V107T, which the 111 is a successor of. Had it for five years now and it gives just over 100/100. As Frankenbagger says, it runs smooth as silk (now it's run-in, wasn't when new!) and Mrs B and I have toured across Europe on 2-3k mile tours. It's great, but one HDF member has a Star Racing 124 touring motor with the same 585 cam and if I had the money I would choose that today! Not as wild as a stock S&S 124, but with 120+/120+ performance.
