Here's my story and I'm sticking to it.... Started out by adding the the pipes and and the SE tuner because I knew I would be doing more shortly and anything I bought within 30 days of buying the bike I saved 20 % on. I l knew I wanted more performance and talked to a builder who convinced my he got great results by milling the heads to increase compression vs swapping pistons and going with the S&S 585 cams . I gave it a shot. I picked the bike up in December. It was pretty cold out. Most of my rides were short 20 min freeze a smile on your face runs. I thought the bike ran great. I really didn't get to run it till I took it down to Daytona beach in early March. After riding it a bit I noticed it had a kind of a sometimes stumble between 2800-3000 RPMs, if it was carbed I would say it was loading up. Also if I was cruising down the highway and happened to be in that range it it would kind of blurble sometimes, just run weird. If I gave it any throttle it would take off. . At first I thought maybe bad gas or I had let it set to long with the same gas in it so I ran some injector cleaner thru it.it never got any better. When I got back to St Louis I took it back to him. It was still cold out but he took it for a ride and said it ran good. What I figured out later was it only did it when it really got warmed up.
I took it to the dealer where I bought it and had them do my 10,000 mile service and got them to put it on the Dyno and try to tune it again. It was better than before but still did the same thing to a slightly lesser degree. Then.... I decided that I didn't like the 585 cam. To much of a top end cam for my taste so I went to a woods 777 which is more of a midrange. I told them to dyno the bike after they did the cam swap. Different dealer because to get into a dealer around here can take a month or more. When I got the bike back the problem was worse than ever. But still in the same range same symptoms .

The dealer charges 90 labor when he's putting on parts that he's also making money on.
He charges 90 an hour for the dyno . If the shop is packed with business where do you invest your mechanics time ? They make more slapping on parts .
That's why they won't put 3or 4 hours into tuning my bike
