We both bought the Harbor Freight wheel chocks and bolted them to the floor, then strapped the bikes into the trailer. It gets busy in the trailer with eight straps running everywhere but still an easy fit.
Two, dry touring bikes weigh around 1,600 pounds, plus whatever other gear is on the trailer, so make sure the capacity is within limits. Specifically, the tires. If they're 15inch "C" rated you might want to upgrade to a quality "D" rated tire.

I used the HF bolted with 2 straps (the bikes had tiedown brackets) and we blocked the rear tires with 2x4 from moving side to side, that was it.
I use the old Pingel removable chocks and have 4 different mounts in the floor 1 center towards front for a single bike, 1 forward left of center and 1 back a little and right of center for 1 touring and 1 non fairing , and 1 rear left to be paired up with front right when hauling 2 dressers. Pingel mounts are lessd than $20 a set and I move the 2 removable chocks wherever they are needed for the load.

Looks like a simple setup, Can you get a quick detatch mount kit for these? You may want to consider the times you haul only 1 bike and the possible need for a center location. to stabilize the load. That is how i ended up with multiple chock locations. Seems every time I hauled a different load over the last 10 years I had to buy another mount kit to balance things out.
I would reconsider the open trailer thing.......just asking for damage in my opinion, plus if you get caught in the rain it seems like they get even filthier than when you ride in the rain. Not to mention the security issues you avoid with an enclosed trailer.
