You need to talk to your dealer and find out if they are checking the oil with the bike on the jiffy stand or level like the service manual says to do. I did not use much at all suring my break-in on my 04 Ultra. I switched over to the HD Synthetic oil at my 1000 service and have not burned any since. 3000 miles on the bike now and runs perfect.
I checked my oil at about 300 miles and found it to be at the bottom of the range on the dipstick. Called the dealer an asked if this was normal and what should I do. He said to bring it in to the shop and have the sevice manager check the oil properly (like I can't?) and he would do what was necessary. I did; then he did. The level has been fine ever since (995miles now).
Checking the oil on an HD is a confusing to a newcomer.
I went through the same problem on my 05 Ultra. After installing an oil temp guage I realized it takes a lot of hard miles to get the oil to the 230 degree operating temp to properly check the oil. If the oil is checked before it is at the proper temp it will appear low. HD recommends checking at "normal" operating temp on the jiffy stand after you let it idle for two minutes. Or when cold should be half way between add and full mark.
After my 1000 mile break in I changed to Amsoil 20-50 synthetic motorcycle oil. After 5000 miles oil level stays at the top of the "full" mark when hot, and has not used any oil even after riding around at the Chattanooga HOG rally with my oil temp over 250+ degrees!

I've had four new EG's and never added oil between changes on any of them. We went on a 5,000 mile trip in June and it didn't use any oil & that was riding in the plains (fast), mountains, and desert (fast & hot). This one is an '02 EG and I didn't use oil prior to the first 1,500 mile checkup.

Just got my new 06 Ultra on the 08/27/05 and she consumed 1/2 quart (US) in the first 175 miles. Seemed that's what it took for the rings to seat and after that not a drop used. A total of 775 mi showing now and the oil level has not changed since I topped up that first time. She has a Stage 1 kit installed w/ SE mufflers. Great running machine and feels like it's getting better as the miles add up. At 3000 rpm this bike seems to just settle in and love the road -- hills and all. She's an "old sweet talker" at the 3 grand mark.
