By the way... anything over a 240 mm rear tire is a lousy idea on the street. Due to the physics of it the lean angles required in curves/turns are outside safety margins IMHO and the front footpeg design is not conducive to lean-offs (to reduce lean angles).

sheldon- Unless you want to lose all the benefits of the V Rods handling, don't waste your time on a 280-300mm tire kit. If you're looking for that fat tire chopper crappy ride, then go for it. To answer your question though, you can spoon up to a 280 on the stock rim, but it will be very squared off and flat, and will make turns far less enjoyable than if you keep the 240. Ultimately for a 280 or 300mm tire you need a 10" rim for them to fit properly. If you try and go with a 10" rim you'll then need a wider swing arm, front pulley offset, etc. Here are a couple shots of my old bike (07 VRSCDX Night Rod Special) with a couple of mods.
