As far as a new bike goes.....well since you have some time before your actually going to pull the trigger on it, I would say do a **** load of research, try to take a extended demo ride when you have picked a model (I know you said you want a FatBoy, but look at and test ride one from each family at least). When I say extended test ride, I am talking about a hour or two. You will need at least that long to get the feel of a new bike and know if its right for you or not. First figure out what type of riding you will be doing most. If your just looking for a bar hopper.....or a dedicated touring bike, or something in between. Just take your time and pick what works for you....not the one that looks the coolest.
Having said that, I must admit my next bike just may be a 2006 Screamin' Eagle FatBoy. I have loved that bike since day 1. I am a real sucker for the CVO Models, and that FatBoy with its 103ci engine, all the chrome....and that cool paint job.....well lets just say I NEED ONE!!!!
