Hi Mike,
Another Jersey rider here.
For a nice afternoon ride you could head down to New Hope, then ride north on the Pa side, along the river. Eventually you end up by Easton, Pa.
You can either turn around and retrace your route or head east into Phillipsburg, NJ and take Rt 22 back to Bridgewater.
Another nice ride is to follow 206 south down towards the Pine Barrens.
The further south you go the more the traffic thins out.
Head up towards Greenwood Lake and just pick any of the many back roads for a nice country ride.
