You hit that nail on the head!! I'll only buy a used bike if I'm planning to rebuild the engine.

Changing your slip on and even many air cleaners won't, "cause your engine to run lean." More serious mods that effect air flow enough to push the fuel trim capabilities outside their limitations will cause issues though. Newer bikes with fuel injection have fuel trim capabilities from -25% to +25% so a simple slip on upgrade won't cause any issues.
Changing valve timing(cams), exhaust pipe diameter, from connected pipes to true duals, or serious engine mods, always require remapping since the fuel trim will easily exceed base trim capability limits.
