Dash panel "inserts"
I've seen some other bikes with different and even custom dash panel inserts, but for the life of me, haven't any idea where to buy them. I'm particularly interested in HD branded ones.
Am I calling them the wrong name? Talking about the inserts in the chrome panel on the tank - usually has the name of the model on it.

You are searching the right name, but there is a very weak selection out there. I am having a similar problem finding one that I like and would consider making my own.

Sold by Kuryakyn you can get it thru any of the big vendors for about $179 Chrome or Gloss Black plus the cost of a gas cap.
