In motor vehicles a general saying there's no substitute for cubic inches but some smaller motors are great performers. In Chevy, the original Z-28 302 for example. In earlier twin cams though the 96 has a definite less desirability than the 103. For the M8 are there any distinct disadvantages to the 107 except bragging rights? Torque curve??? I lean towards the 114 because bigger might be better.
I rode both and decided that the extra 7 cubic inches weren’t worth $1500 to me. The 107 in that chassis is plenty fast enough to get anyone killed. Heck, I damn near got killed with 80” and 65 HP.
Consider that nowdays a Stage 1 cost as much as the 114 and it makes the 114 seem like a bargain. Even if you don't think you need it, the 114 will bring more later if you sell or trade it.

I have the 107 and am totally satisfied with that. Coming off a Twin Cam 110. The torque is plentiful. It is no slouch. I understand the quest for more power for some, no matter that what is already there, is plenty sufficient. I believe the 107 will rev faster due to the shorter stroke. I've added SE Street Cannons for a bit more rumble. I'm done. No further performance mods desired. Couldn't be a happier rider.
Lately I've seen more 107s in dealerships than 114s (at least Softails). I have a 114 in my 2018 Heritage. My guess is that the 114 will be more desirable in the future for re-sale or trade-in.
