The bike looks rad!! Have you ran the bike with just slip on exhaust and no tune? I just bought a 2021 Streetbob and can’t handle how quiet it is. I was thinking of running it a bit longer to break in the motor then add some slip ons.

I have and I’ve never had issues. I will eventually get the tuner after bars. I almost bought the streetbob but chose the slim because of 5 gal tank
I've been working on my lady's 2020 Slim and so far I've installed 16" apes, Kodlin 1.5 lowering kit (really easy), V&H Big Radius pipes, mustache engine guard, and had her seat re-stitched with more back support and more padding. Still waiting on her air cleaner...just wish the pipes were a little louder. She loves the stability of the bike compared to her old Sporty

My initial response was to go T-bars if you had any inclination to put a fairing on it. But looking at the beefy front suspension my personal opinion is that strictly for aesthetics, to go with apes.. My real answer is comfort,, so go with whatever fits you and your riding style. Apes work for me, many seem to not like them, to each their own.
