Reason for the iPod, I had heard of and confirmed with Apple that the camera system is so damned sensitive that the constant vibrations will cause major problems and I paid over $1K for my phone reason 2, my phone is full of pics so, I just ordered a new iPod touch from Apple with Apple Care Plus, was like $249, I get a 10% discount for being a Veteran so well worth it.
I know apple has issued a statement about mounting the iPhone to a motorcycle. It's pretty vague on where and what type of bike they are referring to but it's safe to consider handlebar mounts on a Harley as at least part of that. IMO that's self-serving support guidance and not a widespread issue. There are millions of motorcycles riding around with iPhones on bars for 10s of millions of miles (look at SE Asia alone). If this was a real issue with a high incidence rate you'd have seen it widely reported and it would have been resolved or none of us would be mounting iPhones to handlebars. I'm sure it happens but it's not as widespread as they will have you believe.
Specifically to our bikes, I've ridden for thousands of miles with a number of iPhones either thrown in the TP or mounted to the bar (I also use my jacket pocket if I'm not worried about charging the iPhone). The handlebars and motor are rubber dampened. How much vibration do you feel through the grips? I'm betting it's not enough to put your hands to sleep or destroy the delicate optics/electronics in your iPhone. When I mount my phone to the bars the phone is in a silicone case so it's got even more vibration isolation.
If you want to use an iPod as a music source and keep your phone in the TP or your pocket that's fine. I also have an iPod in my little phone cubby. BTW you can still use your iPhone as a music source over Bluetooth from those locations along with your iPod if you want.

Why even plug it in? My iPhone is in my pocket 95% of the time...Bluetooth is a wonderful thing! The batteries in these newer phones last forever. I can ride all day listening to music from my phone and never come close to running it out of battery power. On multi-day trips, I just make sure the phone is plugged in overnight and ready to go with a full charge. And if you need it for CarPlay...get yourself the CPLAY2air wireless adapter.
