You mentioned the 50s wireless headsets - is this the Sena? I asked because, if this is not the Harley branded unit, you will only get mono reception to the headset.
Still, to answer your question, once you install the WHIM, you should be able to plug the phone into the USB and get carplay.

Another issue with using non Harley branded unit: When the Sena is connected to the whim, the mesh feature of the headset will get kicked out after a few minutes.
