I would contact Biketronics and see if they would trade your module with one that has the plug for your adapter. This way there will be no cutting and splicing wires, Just plug and play.

Am I suppose to slice into this? If so, do I leave the connector on?

if you're running rear speakers off the amp you have 2 choices.

1.) splice into pins 1,2,24,25 for your rear speaker wires and yes you want to leave the connector on
2.) leave the connector alone altogether and simply run 2 pair of speaker wires to the rear tour pak pods.

I assume I want the rears amplified so yes.

Gonna stop for the night but think we made some nice progress. Got all the medallion gauges installed and working (including the oil temp sensor). Front speakers on, tho not wired. last but not least the driving lights, tho not hot wired yet. here's a nice lil pic

looks nice sir. With all that work you've done, the amp will be nothing to install.

Hopefully I am reading this doc right. To wire the crossover to the speaker take the female ends and connect to the polk speaker? That leaves a positive and negative spliced wire that I assume connects to the old speaker wire?

I would be talking the basic setup in the diagram:
