what is the max riser hight I can use with stock mini apes & stock cables on my 06 BOB.

I didn't keep my clamp and ape set up, instead i opted for a T-bar. I can't tell you exactly how much wiring there was there but my bars have a ten inch rise straight up and there was a wood amount of wiring left. Enough wiring that it needed to be shortened by my wrench. I think you might be able to get away with a three inch riser and be alright. Besides anything longer and in my humble opinion the set up looks funky and you might even get some bar wobble if you don't upgrade the bushings.

I didn't measure but I bet there was at least 4" of play in mine when I pulled it all out

I've got 4" risers on my 07' fxd with drag bars. The stealers didn't have to do any re-wiring. I've got my heart set on a tank lift and so I think that i'm going to try to stretch to 6" risers. Do any of you think that I'll have enough wire or play in the stock brake/throttle/idle cables to get away with this???

I went with 4" risers and had to replace clutch, throttle, and idle cables. I had to bend the hard part of the brake line, and the wiring had plenty of slack. If you change the risers, you'll have to do the three cables. Here's what it looks like:

I put 2" pull backs on mine from Drag Specialties and did not have to change any cables.
