You didn't buy a Softail Fat Boy, you bought a Dyna Fat Bob. As far as wheels go, I did the same thing that you want. The front wheel is easy, just need a 16X3 front wheel off of an FLHT (Electra-Glide). Most likely a Road King Classic. You will need to remove the rim and have it powder coated then re-lace it. You will need to make sure it has 25mm bearings in it. The rear wheel was (as far as I know) never available as a 16X5 with spokes (what you need for that 180MM wide tire). I re-laced a Road King Classic 16X5 rim to a Dyna hub to get me what I wanted. Here is a picture of the final product.
