My mechanic took mine off in about 5 minutes. Not sure exactly how it was done, but Mentor is right about: "one hose stays with the bikeand the other one comes off thebike".

You need to remove all of the hoses. Well, you don't "need" to, but there's no point in leaving them. One of the hoses terminates at the throttle body (or carburetor) at a vacuum port. Plug the port with a rubber vacuum plug. The other hose terminates at the air cleaner. Plug off the hole on the air cleaner assembly with whatever. If you do not plug off the vacuum port, then you will have a vacuum leak. If you are going to the trouble of removing it, then by all means remove it all the way. Don't leave any orphan hoses sitting there looking stupid. If you look at a bike without the California canister, the same port exists on the throttle body... with a rubber plug on it.
Someone said "dont plug them up or your bike will starve for fuel". This is not true. The canister hoses do not supply fuel, nor do they supply air to the intake.
I used the bracket for the canister to mount a tool bag support. If you mount a spoiler, then this is not an option.
EDIT: Sorry, forgot about the vent line from the tank... leave it in place and do not plug it. Just let the tank vent to the atmosphere. If this line is plugged, then yes, the bike will starve for fuel.
Summary:
Vacuum line: remove and plug the port at the throttle body or carb. Return line: remove and plug the hole at the air cleaner. Vent line: Leave it alone and let the tank vent to the atmosphere.
