I had 18 apes and I did the Memphis Shades Road Warrior fairing with a 13 windshield. It helped a ton. I know Memphis Shades had just windshields if thats your style
anything memphis shades is pretty damn good. they have a good quick detach system and in seconds I can switch between my fairing and my windshield. they even offer some fatbob specific windshields and fairings.
Sounds like you want a windshield thats easily removeable. So Id suggest the "fats" windshield in a 15 or 17' version for you. I have a 17" for my street bob and I'm 5'9" and thats the perfect height IMO, blocks the most wind while letting you see over the windshield and still throws air over me every once in a while I can feel wind buffet on the top of my helmet if its high winds and im behind a semi truck or the like.
