I had the same thought except for the black out look vs the chrome. I would look around and check out the other dealers and test ride both. Rent if you have to.
Personally, I think the Fatbob would better suite you since handling was one of the first things you mentioned...only because it comes stock with drag bars and dual front brakes. The money saved with the st.bob's lower MSRP would probably fund those upgrades anyway though. Most dynas are the "same old **** in different panties" though. Same bike, just different details.
I have both Street and Fat Bobs - both changed to forward controls which I love. I am 6ft medium build and have been using them for nearly a year. To me they are quite different :
Street bob much better around town - seems easier to move around in traffic, I think simply the apes give better leverage.
Fat Bob - better for agressive longer distance riding but certainly heavier moving around town. The lower bars and slightly better brakes give you more confidence in the turns. The ride is slightly plusher and according to madame its much better for 2-up (compared using a sundowner seat on both). I like the bigger tank and the chrome dial better. I feel like Im sitting on a much bitter bike than the Street and even with forward controls you dont hesitate to attack corners.
To exaggerate the differences I have increased the apes on the Street and grab any excuse to poodle around town. I have done SE Stage 1 upgrade on the Fat for ripping up the hills and even my friends with rice rockets enjoy throwing it around and are more complimentary on its performance compared to Street (again the apes probably a big factor there).
Couldnt say which one I would sell 1st if I had to, they are both great fun and leave me grinning for hours. Enjoy trying them out I think you will understand which one suits your style quite quickly.
I'm thinking of taking advantage of the Sportster trade in program, and am thinking one of these two. I like the black look over the chrome look of the Super Glide. I mostly ride around town, sometimes my wife rides 2up with me, which is why I'm thinking of trading in the 883. I would like to be able to take in touring occasionally though as well.
I really like the handling of the Sportster. Another reason I want to trade up is I want highway pegs, but you have to put crash bars on the Sportster to have highway pegs, and I just don't like the way those look. I like the mid controls for more aggressive driving required for the city, especially here in Phoenix.
Aside from that I'm just looking for opinions of what people think and your experience with both of these bikes.
A short ride report I posted here about a 3,000+ mile ride I just did with my Fat Bob some of it passing thru your fine town ...... that goofy photo enforcement stuff on the freeway there notwithwtanding.

Just curious...what is it that makes the fatbob a better 2-up bike? If both dynas had a sundowner seat for comparison, the only other difference I can think of is the rear tire.
Madame finds that the 2-up ride just seems a little softer, I feel it too so perhaps its a combination of larger front and rear tyres. I think she also feels more confident on the slightly bigger FB with my more positive driving attitude on it, compared to my 'fists in the air' stance with the apes which she probably associates with bar-hopping type behaviour. If she closed her eyes I doubt she could tell the difference. Personally I prefer taking her on the SB, the apes help me keep the bike up when she jumps on and off without warning and with louder pipes I dont have to listen to her so much.
With the mids, if you have highway pegs, you can move your legs and feet around, supported, to different positions while on long rides .... superior for overall comfort. With mids, you have far better control while actively riding your beast. For instance, try standing up quickly or just getting off the seat for a major bump ahead, w/o major pulling on the bars when equipped w/ forward controls.
