Was going to install a few simple bolt on parts, but wasn't sure if torque is important to be precise and if locktite is necessary (since vibration would be an issue) and if so, which color/type of locktite would be recommended.

Horn cover (just a wrinkle black coated stock one that I picked up)
Derby Cover (same as above)
Wrinkle Black Passenger Footpeg Support Kit (Part# 49088-09) & Rider Footpegs (PART# 50939-41)
Sissy Bar Side Plates Rigid (Part# 52856-06)
I know this may seem like a real stupid question to most of you, but I am just looking for some help from those with a bit more experience than me.
Also, does the Sissy Bar Side Plates require the removal of the stock reflector on the fender? If so, any tips on a clean removal of these which I assume are adhesive like the Harley logo.

DP, I use blue (removeable) threadlocker on most everything.
A small drop is all you need.
The manual will tell you when to use the Red (heat to remove).
Torque values are important on all your Critical fasteners,
and anything that may leak.
(the manual will give torque values and sequences).

I just installed the Sissy Bar Side Plates on a 2008 Street Bob. The plates go between the fender and the fender support. A mirror is nice to have to take a look at the turn signal bolt. But you can also feel it. Move the turn signal wires out of their brackets first, so you get the wires out of the way of the bolt. Before you do anything turn the shocks down to one, you need a Harley tool to do this. It allows the long bolt that comes out of the turn signal to almost clear the tire. I say almost. I had to have someone lift the rear fender up when I reinstalled the bolt. The bolt was 1/2 inch and a open end wrench took it off with no problem. The front bolt is a torx #45. Don't try to use the cheap torx'x that come with the basic motorcycle tool kits. (all mounted together like an Allen wrench set) To easy to strip a torx with these. I bought a Craftsman set. The reflector comes off easy, pried it off with a flat blade using a piece of thick plastic to make sure I did not scratch the bike. They just flick off with very little effort. I would think that the goo citrix smelling stuff that removes gum from stickers will take the backing tape that is left behind off. Did not get around to that yet. Got the sideplates on okay, but looks lilke I will have to remove the seat to faster the Sissy bar and luggage rack to it. The Sundowner sticks out so far no room to tighten the bottom screws. By the way I tried it without removing the reflectors and it was not going to give the torx screw much room to bite, plus I suspect when tightened properly would break the reflector anyway.
I recently installed the passenger foot peg mounts and pegs. I don't recommend this DIY unless you are fairly mechanically inclined or have some help. The drive belt side is difficult. Harley manual says to remove the rear wheel. I did it without doing that. But I had a bike lift, and a mechanic nearby to help. Had a lot of trouble with the front hex bolt that holds the chrome belt guard on. Had to use a small chisel to get it off and got another screw. As you tighten down the mounts the belt is in the way. The Craftsman Torx was just short enough to allow this to be done. The better Snap-on was to long and I coud not have done it with it. Do a search on the this forum and you will find some posts about this. The passenger peg mounts had something like blue lock tight on them already. The pegs I put a little blue on because I might find something better later. Red is for stuff you and the next owner are not going to remove unless they use a torch.
I don't let the dealer do much and did my 1000 service myself. But for somethings a friend to help, or paying a Indy to do it, might be cheaper and take less time.
