So I removed one of my pipes today and it does not look like I can perform this procedure. Unless I am missing something I guess the stock pipes on an 07 wide are different from all of you above. When I look in my pipe, either end, it looks completely solid except for a plate about half way in and a few perforations on the pipe walls around the plate. There are no rivets or bolts and it does not look like it is even possible to remove anything. If anybody knows how to remove the baffles on an 07 wide I would greatly appreciate some assistance.
After a week and a half of listening to my new fat bob sounding like a stock honda, I decided it was time.
I removed the pipes from the bike, drilled the rivets out, punched the baffles out with a handle from my hydraulic jack, removed the packing, punched holes in the cap in the center of the baffles, put the baffles back in the pipe, used a bolt to secure them, and re-installed back on bike. I love it. Sounds like a Harley should. Will be taking the pipes and heat shields to get black powder-coated this winter.
I removed my baffles and cut the pipe where the outer mesh is smooth. This is where the plug is at. I cut the plug out and took the baffles apart. I also removed the cone that the rivets go through and attach to the pipes itself. I then removed the small pipe from the cone (the outlet). Inside the baffle is a smaller pipe on the inlet end, leave this in as this will create back pressure and will tune the exhaust as tuned exhaust goes small to large. Weld all the pieces back together and it will sound great, deep and throaty, with no chirps,squeels or other bird sounds.

I pulled my baffles out all the way and left em out 6 mnth till I got a thunderheader, sounded great and ran good too, but I have a power cmdr and tweaked it till I liked it. I like the TH a lot but miss the loud
I drilled three 1/2" holes in the end of each pipe. Did it on the bike. Didn't take long and it sounds a little more like a Harley but isn't too annoying as some people might put it.
I don't know if this was the right or wrong thing to do but I like it till I can afford some big radius pipes.

After my above post, I finally just pulled the baffles and straight piped it. I ran like this "Super F'N Loud" until I got worried about back-pressure. I punched bigger holes in the cap and put the baffs back in. It still sounds pretty good, just not nearly as loud. If you want LOUD, pull the baffs, packing, and leave it that way. I was just worried for a motor that has less than 1200 miles and hasn't had the 1000 service done yet, it might cause problems. I am getting some V&H blacked out pipes in a few months, so next season, I will have what I want.
