Just curious...have ya checked out other brands grinds, or is the dealer installing them & saying they won't install anything but SE? Either way SE grinds work good, but others are better. If it doesn't really matter to you then just get the cams that will work in the rpm range that you like!
This is right from a SE performance catalog...The 211 cam is best suited to added compression, and offers good mid- to top-end power. A good match for the "HTCC heads or Twin Cam 88 performance heads. 204's produce peak power around 5800 rpm. The 251 cam is a high lift, torque cam designed to be used for larger disp. engines where mid range power is desired. Granted this is from an '04 catalog but I hope the info helps.
i"ve used 211s in a stock 96,it made good #s 93 hp, 97 trq. i"m useing 211s now in my 95. but it is a upper rpm range cam, hits around 3k. 204s have better low end, andrews 37 would be my choice if leaving it a 96.
I think before you ask a bunch of people how much they like a particular cam, you need to define how you're going to be using it first. Everyone here is going to tell you that what they use is best. Whats best for them isnt necessarily whats best for you if you have no idea what you want from the beginning.
Do you have any idea what you want from your motor, or what you riding style is?

Prob a good idea.. as Im not sure what kinda of cam I need. I ride around town alot.. alot of in the country riding. high speeds are 60 to 70 ... freeway riding 75-80.. what I want is to have the power at low speeds to get the hell out of the way of cage drivers.. an the ponies to get out of the way at top speed also.. so I guess what I want is power on demand.. at low RPMs & High.. hope that makes some since..
My setup now is Stage 1 SE air, V&H BSS, Powercommander V...
It seems I just need to do the head work an the cams.. an be done with it..
