My wife has been wanting me to give her a ride on the bike for awhile now and so far I have resisted. I'm around 240lbs and she is a whopping 185 herself. I'm concerned about the bikes handling with both of us on it. Any advice (besides a diet)

The bike will be fine, the only area of concern would be the passenger leaning the wrong way on corners. Take it easy for a while and all should be OK.
What superdog said, put another 6-8 lbs in rear tire and adjust the preload on the shocks. As far as leaning, don't instruct her to lean or fight it, just to look over your shoulder on the side you are turning to.
