I Have a 06 SB and Love the way it looks and handles. Even though I don't care for the Fat Bob's, i Imagine having a larger front wheel would help in cornering, anybody compare the two?(Street Bob Vs Fat BoB)
Just rode the Fat Bob at Sturgis; really liked it...the larger front wheel seems to be more "planted" on the road and yet the bike is light enough overall to bend through turns easy enough...the Street Bob is just a standard Dyna...if I ever had to replace my bike (which will outhandle either of the above) I'd go for a Fat Bob; at least as a starting point...needs better quality suspension, at least.
I don't think you will get a good answer here (everybody will say their bike is the best). Here's what HotBike said about the FXDF.

I like the FXDF but I came from a 1200C. Don't rule out changing your front tire size to help if you think that's a problem. I personally think the drag bars,wheel base, low stance and fat front tire makes the Fat Bob ride great. It is a more aggressive riding posture. I should note that it does feel FAT at 0mph and very low speed turns but once it's rolling it's all smiles.
I would not trade a bike for a reason like this. The only HD I would think handles great would be the XR1200 but I haven't ridden one.
Mine is the best handling dyna, it is an allmighty fxdx with some kick-azz metzelers on it wich makes it handle even better! No other big twin in stock trim will touch it.
