I've been fighting this same problem since last fall. Bike is a '07 Ultra with 103Stage II Big Bore w/SERT and oil cooler. First year of riding on the build with no issues. Late last fall, got caught in heavy traffic, engine got hot, and pinging started. I've checked for exhaust leaks, intake leaks and codes. Nothing. I always run 93 octane and buy from several different gas stations, to eliminate that problem. I've talked to several dealers and I'm not getting any satisfactory answers. Two dealers that have always been pretty good in the past, have basically said, "nature of the beast, learn to live with it". That's not working for me! I also have a '06 RKC that pinged awful, overheated and ran like crap. Changed to 25 degree injectors and a new map and problem has been solved for over 8,500 miles. I can sit in heavy traffic for extended periods w/o any issues. Before the fix, if I got caught at a stop sign (three cars back) in 70 degree weather, engine would shut down.
With the Ultra, I don't want to take so much timing out of the engine to fix pinging that it kills performance. I haven't gone the timing route yet. I do know that the ping is at 2650 - 2700 RPM regardless of gear and it is outside temperature related. Nothing stands out looking at the map. I think that summer gas here locally could be part of the problem? Only a guess. I'm not a big believer in snake oil, however, I did run a tank full of Seafoam thru it and last tank fill added a product that one of the dealers gave me called Liquid Horsepower. I did ride 75 miles yesterday solo (pinging problem more noticeable 2-up) got caught at a train crossing (75 degrees outside temperature) no pinging. I'm not saying that it is fixed and I don't have any affiliation with Liquid Horsepower. I'm going to run it this weekend, which is supposed to be hotter weather and I'll report my results.
With my '06 RKC, I was told by a different dealer that it was normal to ping, overheat and shutdown. I didn't buy that then and I'm not buying it with the Ultra, now. Just disappointed that two pretty good dealers claim it is normal. Funny thing is that one of these dealers told me that pinging has been fixed on the 2010s. Funny huh? Not!!!
For what it's worth, I have the HD oil cooler on my bike also. It was installed by the dealer when my bike was new. My bike pings (if that's what it is) even if the outside temp is only 70 degrees F. It's never done it when I'm sitting at idle, only when I crack it wide open throttle. But then again, I very seldom have to sit over 30 seconds in traffic. I called Harley Davidson yesterday, they said that the dealer had not contacted them yet concerning my bike. HD thought that the dealer would have contacted them by now if my bike had been in the shop for the last 9 days. HD asked my permission to contact my dealer, which I obviously granted. We'll see.
Same problem on my FatBob. Has been on the road for a month now, 3K miles, completely stock. Haven't talked to the dealer yet but I'm going to in a few days.
Consider finding a new dealer if you blew the whistle on that one! (even if it was deserved)
I guess I didn't consider it blowing the whistle on the dealer, I was complaining to Harley about my bike more then I was complaining about my dealer. HD is the one that said my dealer hadn't contacted them, which I admit was a little surprising to me considering the time my bike had been in the shop.
