yes , they fold up great. the rears stay up until they are being used. i have to say , these things are the most comfortable, versatile i have ever used. unlimited foot positions, plus unlike hwy's u can fold them in for a different look if need be.

 

Can you fold/unfold them with your toe on the fly or do you have to stop?

 

not made to change on the fly, there is a sliding button that locks them in and out, so they don't close on u while using i assume. now you could bend down and change them while you are running ,but i would work on your flexibility first
