question...as I am looking at wheels, I am seeing them as narrow glide, mid glide and wide glide...what does this mean? It sounds like it has something to do with the hub, but I have no idea.

Sportsters amd pre 06 Dynas are narrowglides. All 06 and later Dynas(except fxdwg and fxdf) are midglide. FXDWGs, FXDFs and Softails are wideglides. It has to do with the distance between the tubes in the front forks, which kinda relates to hub width.

Your Street Bob is a midglide.

Are those stainless in there right now Joe? I want to do the same thing on mine, have you guys powder me some rims, and I want stainless spokes, I'm sick and tired of having my wheels/spokes look like the anchor off of barnacle bills.

Joe your the man! but Im in the process of moving from Texas to Alabama... maybe next month when I get situated down there.

so, back earlier in this thread, someone suggested changing wheel/tire combination to go wider or bigger...if I want to go wider, front and rear, does anyone know the widest wheel I could do?

depends on what you want to do, largest you can fit in back under the stock fender is a 200, you need to relace a wider rear ring, for the front to run a wider tire you can do the same lace a wider ring and run a fatter front tire.
