I have herd a bunch of threads on installing a new headlight which requires messing with the harness. Can't I just cut the wires behind the stock headlight and splice the 2 wires from the new headlight to it and the tape?
I haven't installed or changed my headlight, but I can't imagine you couldn't do what you are asking. It's your bike, you can do what you want. I suppose it's just a matter of how clean of a job you can do with the splicing.
sure you can....but I don't think I would tape with all the nice connectors out there you could use. They are relatively inexpensive too. Check at an r/c supply place and get some nice gold plated solderable connectors (hobby-lobby.com etc.)
I cut mine and soldered that connections taped them and then shrink wrapped them gotta looks close to see that something was done. oh tried the waterproofing liquid tape, nasty *** stuff.
Depends on how good you want the installation to look. If hacked wires with electrical tape don't bother you... go for it.
If you don't mind spending a little time, popping the terminals out the housing and removing the entire harness from the stock bucket, and reinstalling in the new one... looks pretty good afterwards.

I did the same then finished it off with some wire wrap from cableorganizer.com <-- a link from JRK.
I cut my wires leaving enough on the oem headlight to sell or reuse the connector if needed. Then i soldered the new wires put heat shrink tube on each one and that was that you have to really look to see that i did anything to the wiring.
