I bought my bike used (2008 Street Bob) and the dealer I bought it from said he suspected that there might be some work done to the engine. How can I tell what has been done? Maybe a cam? Is there any way to tell if someone updated the map after installing an AC and pipes? The bike came with a SE stage 1 ac and VH sideshots. She will definetly pop and crack real loud when I let off the throttle at high rpm. Normal or am I running a bit lean?

It would be a safe bet, that with the Stage.1 AC and sideshots, that you have the stage.1 map. A bit lean is 'normal' for these bikes
I'm running a very good tuner, and the bike will still crack off a good pop if I let off the throttle quickly at high rpm. I can adjust the decel fuel mixture tho.... but usually I don't just slam the throttle closed from high rpm....
The dealer you bought it from, should know exactly what the bike has, or doesn't have, regardless if they sold it originally or not.
They were not sure as I bought it from a used dealer. I am pretty sure the previous owner did not have the work done at this location. Oh well, I have already order a tuner...hopefully it helps and wasnt a waste of money.
You will need to know if it has had a Stage 1 download before you install the tuner. It will make a difference. An HD dealer can connect the bike up on his computer analyzer and tell you if and when the download was installed.
