The swap can be done with stock cables and wiring, it will be 2" longer than it NEEDS to be, but that is not a big deal. I have 8" T-bars and 2" under stock cables, there is no extra there. Did the same thing on my 01 Low Rider, no problems.
Before you buy anything, just swap the controls to the new bars, no need to bleed anything or change any wiring, see how you like it then decide what you really want with cables and wires.
