You could do the change in about 30min if you have a motorcycle jack. That's about how Long it took me to change mine on my SB. You might need to go with a new stop-tail-turn module because you will be losing your center light.
What kit did you use on the SB? Any problems 2 up riding?

I used the Chopped fender kit the HD offers for the Dyna's (Doesn't fit the Fat Bob or Wide Glide cause of fender width, but like others have said the Wide Glide fender should work on your Fat Bob). Comes with the chopped fender, new light internals (for the Stop-Tail-Turn, STT for short, configuration) and the STT module (to go from the stock 3 tail light system to the 2 tail light system). So I would imaging that you could go with HD's STT module or an aftermarket one like Kuryakyn's. If your turn sigs already have the three wires running to them then they are the same as the ones that came in my kit. I got lucky with my kit, because I only ordered the fender, I didn't need the rest of the stuff but it all came in the kit, is the extra's were $FREE.99.
So if you where to either chop your fender or order the fender on the Wide Glide, you would need to look into getting an STT module and new turn sig guts (if you need them). Then it all comes down to how you relocate your State Plate and wiring a light to it.
And not there are no issues when riding two up, I just put on the rear seat and sissy bar and go.
The fender I installed os the one in my sig.

You mean Strut Covers, the struts themself don't come off your bike unless you cut them off and I don't know if you need to replace the ones you have or not.
When I cut the #$%^ out of my back end I just unplugged the center fender light. Rerouted the turn sig wiring to the outside of the fender down the length of the remaining strut. Turn signals worked fine as sigs and brakes without any kind of module or anything else.
