I would strongly advise staying with the dual disc setup. Aside from the disc blocking the view of the wheel, I think having the extra stopping power up front is a plus.
As far as your question as to whether its hard to change to a single disc... I think you would have to make sure you have the proper spacers on the axle and then do something about the tabs on the fork lower.
I'd stay with the dual. I just did a swap on my Street Bob and have the single. I have a wheel that can convert to the dual, but I'd have to change my right lower. Not gonna spend the extra money right now. I also put on a fat front 18" tire for the Fat Bob look. By the way, the nut cover on top the triple unscrews. Was getting ready to throw channel locks on it when I noticed it was loose. Nowhere in the service manual did it tell me how the cover came off. Aside from my wiring, this was simple. Okay, finding the right wheel and all the parts associated with it took some work. Have fun with it!
